Nkwobi (Spicy Cow Foot Delicacy)
Nkwobi is a traditional Igbo delicacy made from cow feet, often enjoyed as a special treat or at gatherings. This spicy, flavorful dish is a favorite among those who appreciate rich, meaty textures combined with bold spices.
Ingredients:

2 kg cow feet, cut into pieces

1 tablespoon ground crayfish

1 teaspoon ground calabash nutmeg (ehu seeds)

1 medium onion, sliced

2 tablespoons palm oil
-
1 teaspoon edible potash (kaun)

2 seasoning cubes

Salt to taste

Utazi leaves for garnish (optional)
Instructions:

Wash the cow feet thoroughly and place them in a pot. Add enough water to cover the meat, season with one seasoning cube and salt, and cook until tender. This may take 2-3 hours.

While the meat is cooking, dissolve the potash in a small amount of water and set aside.

Once the meat is tender, remove from heat and set aside.

In a separate pot, pour in the palm oil. Gradually add the potash solution, stirring continuously until the mixture thickens and changes to a yellowish color.

Add the ground crayfish, ground calabash nutmeg, remaining seasoning cube, and salt to the oil mixture. Stir well.

Add the cooked cow feet to the mixture and stir until the meat is well coated.

Allow the Nkwobi to rest for a few minutes to absorb the flavors.
Serving Suggestions: Serve Nkwobi in a traditional wooden bowl, garnished with sliced onions and utazi leaves. Enjoy with a chilled beverage.
