Introduction
Suya is a popular Nigerian street food consisting of skewered meat generously coated in a spicy peanut-based seasoning, then grilled to perfection. Originating from Northern Nigeria, this delicacy has gained nationwide popularity for its smoky flavor and fiery kick. Suya is often enjoyed as a snack or appetizer, accompanied by sliced onions and tomatoes.
Ingredients
Meat:
500g beef or chicken, thinly sliced
Suya Spice Mix (Yaji):
1/2 cup roasted ground peanuts (unsalted)
1 tablespoon ground ginger
1 tablespoon paprika
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 seasoning cube, crushed
Others:
Bamboo or metal skewers, soaked if wooden
Vegetable oil for brushing
Instructions
Prepare the Suya Spice Mix:
In a bowl, combine the ground peanuts, ginger, paprika, cayenne pepper, garlic powder, onion powder, salt, and crushed seasoning cube.
Mix thoroughly to create the yaji spice blend.
Marinate the Meat:
Thread the sliced meat onto the skewers.
Generously coat each skewer with the suya spice mix, pressing the seasoning onto the meat to adhere.
Place the seasoned skewers on a tray, cover, and refrigerate for at least 1 hour to marinate.
Grill the Suya:
Preheat a grill or oven to medium-high heat.
Lightly brush the skewers with vegetable oil to prevent sticking.
Grill the skewers for 5–7 minutes on each side, or until the meat is cooked through and has a nice char.
Serve:
Remove the suya from the grill and let it rest for a few minutes.
Serve hot, garnished with sliced onions, tomatoes, and cucumbers.
